How to cut up a chicken into 8 pieces

Step 1 - Remove wishbone

Breast side up, use knife to expose wishbone, which is the first bone in cavity. Use fingers to snap it from its attachment and pull it out.


Step 2 - Remove backbone

Turn chicken over onto back and use scissors to cut along either side of the backbone. Discard the backbone.


Step 3 - Remove legs and thighs

Turn chicken over and pull leg away from body. Use knife to cut skin between leg and body. Open it out so it "pops" out of hip socket.


Step 4

Cut skin between body and leg and thigh. Repeat for other side.


Step 5

Separate legs and thighs Use knife to cut between leg and thigh. Repeat for other side.


Step 6 - Divide breast

Use knife to cut down the middle of the breastbone.


Step 7

Separate wings Cut the wings from the breast halves.


Step 8

There you have it - 8 pieces
