Australian House & Garden recipe for Eton mess.
INGREDIENTS
500g ripe strawberries, hulled and halved or quartered
2-4 teaspoons caster sugar, plus 1 tablespoon extra
600ml cream
8 store-bought meringues or meringue nests
METHOD
1 Combine strawberries in a bowl with 2-4 teaspoons sugar and toss well. Stand 20mins, tossing from time to time. Remove a quarter of these strawberries and chop fairly coarsely. Set halved or quartered, and chopped strawberries aside separately.
2 Place cream and extra tablespoon sugar in a bowl and whip until thick.
3 Crumble meringues into cream, reserving one meringue for the top, and fold together with the chopped strawberries. Lightly fold in the remaining halved or quartered strawberries, leaving a few to scatter on top.
4 Arrange mixture in bowls. Scatter with remaining strawberries and crumble remaining meringue over.
