Australian House & Garden recipe for soy marinated salmon.
INGREDIENTS
2 whole sides of salmon, about 1kg each
1 lemon, cut into thin wedges
1 orange, cut into thin wedges
Marinade
2 tbsp soy sauce
3 bird's eye chillies, seeded and chopped
1½ tbsp hot chilli sauce
Zest and juice of 1 lemon
1½ tbsp honey
METHOD
1 To make marinade, place all ingredients in a bowl and stir to combine.
2 Make 3 diagonal slashes in skin of each salmon. Place a large sheet of foil on a clean surface. Lay one side of salmon on top, skin-side down, and arrange lemon and orange wedges on top. Drizzle with some of the marinade.
3 Place second side of salmon on top, skin-side up. Tie sides together with kitchen string. Pour over remaining marinade, wrap securely in foil and refrigerate overnight.
4 Preheat oven to 200°C (180°C fan). Remove salmon from fridge and bring back to room temperature, about 30-60mins. Open foil and baste salmon with marinade in parcel. Close foil around fish, leaving parcel open at top. Roast 45mins, then remove from oven. Stand 10mins before serving. Serve hot or cold. Garnish with pickled cucumber salad.
