Australian House & Garden recipe for super crunchy roast potatoes.
INGREDIENTS
2kg potatoes, preferably sebago, peeled, cut into even-size chunks
1/3 cup (80ml) vegetable or peanut oil
1½ tbsp plain flour
3 tsp mustard powder
Maldon sea salt flakes, to serve
METHOD
1 Preheat oven to 220°C (200°C fan). Pour oil in a roasting dish and place in oven.
2 Cook potatoes in boiling, salted water for 5mins. Drain well, shake in colander to rough them up a little. Combine flour and mustard powder in a small bowl, then sprinkle over potatoes and toss well.
3 Add potatoes to roasting pan and toss to coat on all sides with hot oil. Bake 50-60mins, tossing at least once, or until golden and crunchy and cooked through. Transfer to a heated serving dish and scatter with Maldon sea salt flakes to serve.
