Australian House & Garden recipe for ham with Grand Marnier glaze.
INGREDIENTS
1 cooked ham, about 4-5kg
Good handful cloves or small rosemary sprigs
1½ cups (330g) brown sugar
1 cup (250ml) orange juice
1/3 cup (80ml) Grand Marnier
METHOD
1 Preheat oven to 250°C (230°C fan). Place a rack in the centre and oil a large roasting dish.
2 Trim ham of skin, leaving a 2-3cm band at shank end. Leave about 2mm of fat on ham and score in a diamond pattern. Stud each diamond with a clove or rosemary sprig. Place ham in prepared roasting dish.
3 Combine sugar, orange juice and Grand Marnier in a pan and bring to a boil, stirring from time to time, until sugar has dissolved. Simmer 10mins over medium heat or until syrup begins to thicken. Transfer to a bowl and allow to cool 5mins. Make sure mixture is thick enough to cling to ham.
4 Brush top and sides of ham with Grand Marnier mixture, but not underneath. Bake 20mins, or until caramelised. Serve hot, at room temperature or cold.
