Australian House & Garden recipe for beef stir-fry.
INGREDIENTS
¼ cup (60ml) vegetable oil
600g beef stir-fry
2 medium red onions, peeled, cut into 8 wedges each
4cm piece fresh ginger, peeled, finely grated
3 garlic cloves, sliced
1-2 tbsp green Thai curry paste
2 tbsp (45g) crushed palm sugar
2-3 tbsp fish sauce
300g snow peas, trimmed
1 handful snow pea sprouts, trimmed
1½ cups loosely packed
Thai basil leaves
Rice or noodles, to serve
METHOD
Heat 3 tsp oil in a wok over high heat and brown beef in batches; remove to a bowl. Add remaining oil, onion, ginger and garlic to wok and fry 3-4mins, tossing well. Add curry paste, reduce heat to low and cook, stirring, for 5mins. Add palm sugar and fish sauce. Once sugar has dissolved, add snow peas and cook for 1min. Add browned beef, sprouts and basil and toss to combine. Serve with rice or noodles.
