Although it's grown all year round, there is not much better than an icy cold slice of seedless watermelon on a hot summer's day! Even better? One without seeds! Seedless watermelons taste pretty much the same as their seedy brothers, but only contain the edible white seeds. So aside from a sweet, refreshing snack, did you know how many other tasty ways it can be eaten? Heaps! Seedless Watermelon has a huge range of recipes from drinks to full meals. The benefits


Seedless watermelon is 92 per cent water, eight per cent sugar, contains no fat and is packed with vitamins A and C, potassium and iron. Plus, it's just been discovered to contain high levels of the antioxidant Lycopene which gives it it red pigment. Studies have shown diets that contain a lot of Lycopene have a lower risk of developing certain cancers.

How to buy


Look for firm, smooth skin and a hollowy sound when you tap them. Pick them up - the good ones will feel relatively heavy for their size. If you're choosing halved versions, go for the redder flesh - it contains higher levels of Lycopene.

How to store
Store whole melons at room temperature for up to 1 week. Once cut, wrap in plastic and store in the fridge for up to three days.

Enjoy this meal: Sesame Chicken and Seedless Watermelon


Ingredients
2 tablespoons peanut or vegetable oil
4 skinless boneless chicken breast halves, cut into chunks
1 tablespoon soy sauce
2 tablespoons extra dry vermouth
6 cloves garlic, thinly sliced
1 tablespoon minced fresh ginger
2 bunches shallots, trimmed and chopped
½ cup toasted sesame seeds
4 cups diced, drained seedless watermelon

Method
1. Heat the oil in a wok over high heat until it just begins to smoke.
2. Stir-fry the chicken chunks in the oil until they begin to brown.
3. Reduce the heat to medium and add the soy sauce, vermouth, garlic and ginger. Stir-fry until the majority of the liquid in the wok is gone.
4. Add the shallots and sesame seeds and saute until the chicken is cooked and the sesame seeds are toasted.
5. Arrange the diced seedless watermelon over four to six plates and serve the chicken over the seedless watermelon.
