The facts

A slightly underdeveloped onion, the spring onion or shallot has a small white bulb with long hollow green shoots. Spring onions have a subtler flavour than normal onions; they are sweet but still possess a pleasant tang closer to the bulb.

The uses

Spring onions will add flavour to stir fries and soups. They can be mixed into mashed potato for a twist to the traditional dish. Spring onion is also perfect to be sliced raw into salads.

Choosing in store

Make sure the bunch is a bright green and the shoots aren't limp. The bulb should also be firm.

Pair with

Most other stir fry vegetables, potato, lettuce, noodles and Asian style soups.

Tip

Slice the green tips of the spring onion into small circles and use as a garnish.
