OK, so they’re in the shops all year round, but beans are at their absolute best around August/September so right now! The most common, green beans, are long, firm straight pods that can be eaten whole. Choose the greenest you can find and if they crisp when snapped, they’re perfect. Beans are a great go-with-anything vegie – throw them in a stir-fry, steam them and serve with steak and mash, or boil them with a bunch of other fresh greens like peas and broccoli for one superhealthy side dish.
Wash beans once they’re home, drain them, place them in a vented plastic bag (those green “vegie” plastic bags from the supermarket) and keep in the fridge. They’ll last a few days, but are best eaten straightaway.
Wash again, break off one end and, if needed, pull it down so the “string” is removed. Snap off the other end as well. Then steam, stir fry, boil or cook them till tender.
