Real Living recipe for coconut beef with cashews.
INGREDIENTS

2 cups long-grain rice
3 cups water
2 tbsp vegetable oil
500g beef stir-fry strips
2 tbsp yellow curry paste
200g green beans, trimmed, halved
1½ cups coconut milk
1 tbsp brown sugar
2 tbsp roasted cashew nuts
2 tbsp fish sauce
½ cup coriander leaves
METHOD

1. Place rice and water in saucepan. Bring to boil, stirring occasionally, then lower heat. Cover and simmer for 15 minutes. Remove from heat and stand, covered, for 5 minutes.

2. Meanwhile, heat oil in wok or frying pan for 1 to 2 minutes until smoking. Add half the beef (being careful as the oil can spit) and stir-fry over high heat for 2 minutes until browned. Using slotted spoon, transfer cooked beef to plate. Repeat steps above for the remaining beef.

3. Add curry paste to pan and stir well. Stir in beans, coconut milk, sugar, cashews and fish sauce and cook over medium heat for 3 to 4 minutes until sauce is thickened. Return beef to pan and heat through for about 1 minutes. Stir in coriander and serve with rice. Enjoy!
This recipe tastes just as delicious with chicken.
