Real Living recipe for perfect roast potatoes.
INGREDIENTS
1.5kg coliban potatoes
1 tbsp salt
1/3 cup olive oil
METHOD
1. Preheat oven to 220ºC (200ºC if fan-forced). Peel the potatoes and cut into 5cm cubes. Place in saucepan of cold water, add 1 tbsp of salt and bring to the boil. Cook over a medium heat for 5 minutes, drain and return to saucepan. Shake pan vigorously so the potatoes become fluffy around the edges.
2. Put the oil in roasting tin, place in oven for 5 minutes for the oil to heat, remove from the oven and add the potatoes (take care as the oil may spit). Using a metal spoon, stir potatoes to coat with oil and return to the oven. Roast for 60 to 75 minutes, stirring several times until potatoes are crisp and well browned. Serve with the beef.
