Easy recipes
Real Living recipe for chilli beef and bok choy noodles.
INGREDIENTS
2 tbsp light soy sauce
1 tbsp chilli bean sauce
2 tsp clear honey
1⁄3 cup cold water
Salt
450g fresh hokkien noodles
2 tbsp vegetable oil
500g scotch fillet, sliced thinly
350g bok choy, sliced roughly
1 large red capsicum, deseeded and sliced
2 garlic cloves, sliced
METHOD
1. Combine sauces, honey and water in bowl and set aside. Bring saucepan of salted water to the boil, add noodles and cook for 1 minute. Drain and set aside.
2. Heat half the oil in wok, add beef and stir-fry over high heat for 1 to 2 minutes until golden. Transfer beef and pan juices to plate. Wipe pan clean with paper towel.
3. Add remaining oil to pan and stir-fry bok choy, capsicum and garlic for 1 minute. Return beef and juices to pan with sauce and heat for 1 minute. Add noodles, stir, and cook for 1 minute until hot. Serve.
This quick stir-fry will have them begging for more.
