Real Living recipe for pasta with sausage, tomato & olives.
INGREDIENTS

1 tbsp olive oil
2 large Italian pork sausages, skinned
4 anchovy fillets, chopped
400g tin diced tomatoes
200ml tomato passata
200ml water
1 tbsp small salted capers, rinsed
150g cherry tomatoes, halved
¼ cup small black olives, pitted
400g macaroni or penne
Salt
2 cups rocket leaves
Shaved parmesan, to serve
METHOD

1. Heat oil in frying pan. Pinch off large pieces of sausage meat and fry in oil until golden.

2. Add anchovies, tomatoes, passata, water and capers. Cook over medium heat for 5 minutes, stirring occasionally.

3. Add cherry tomatoes and olives and cook for 10 minutes.

4. Meanwhile, cook pasta in saucepan of boiling salted water until al dente. Drain.

5. Add pasta to sauce and toss well. Scatter with rocket leaves and serve in warmed pasta plates, with parmesan.
This is a truly scrumptious pasta dish – the combination of flavours is just divine. The addition of anchovies intensifies the taste. And it’s easy to make. Bellisimo!
