Easy recipes
Real Living recipe for beef skewers with homemade satay sauce.
INGREDIENTS
Satay sauce
½ cup light soy sauce
3 tbsp sugar
½ star anise pod
2 tsp minced garlic
2 tsp dried chilli flakes (optional)
¼ cup chicken stock
1 cup smooth peanut butter
2 tbsp fresh lime juice
Beef skewers
450g rump steak, cut into thin strips
3 tbsp light soy sauce
2 tbsp fresh lime juice
2 tsp minced garlic
1 tsp minced ginger
Coriander leaves, chopped peanuts and sliced green onions (shallots), to garnish
Steamed rice and salad, to serve
METHOD
1. Place bamboo skewers in dish and cover with water to soak.

Make sauce
In microwave-safe bowl combine soy, sugar, star anise, garlic, chilli and stock. Cover and cook on full power for 3 minutes.
3. Remove from microwave and set aside to cool for a few minutes. Add peanut butter and lime juice and stir well.
4.
Make beef skewers
Meanwhile, in dish combine steak, soy, lime juice, garlic and ginger. Cover with cling wrap and place in fridge to marinate for 30 minutes.
5. Thread beef onto soaked skewers and grill for a few minutes each side. Garnish with coriander, peanuts and green onion and serve with satay sauce, steamed rice and salad.
This satay sauce is yummy with beef β or pork or chicken. Kids will love it because itβs mild β chilli is optional.
