Easy recipes
Real Living recipe for pear crumble.
INGREDIENTS
5 pears, such as Sensation
2 tsp lemon juice
½ tsp vanilla extract
1½ tsp cornflour
1½ tbsp light brown sugar
Topping
1/3 cup flour
1/3 cup rolled oats
2 tbsp light brown sugar
5 gingernut biscuits, or other ginger biscuits
Pinch of cinnamon
3 tbsp butter, melted
Creme fraiche or ice-cream, to serve, if desired
METHOD
1.
Heat oven to 190°C (170°C fan-forced). Cut pears in half, remove cores and roughly chop into approx 1½ cm pieces.
2.
Combine lemon juice, vanilla extract, cornflour and sugar with pears in bowl while you make the topping.
3. Make topping
Combine all dry ingredients in food processor and pulse until combined and oats are chopped finely. Add melted butter and pulse once more.
4.
Divide pear mixture amongst 4 small ovenproof bowls, or 1 larger baking dish. Top with mixture and bake in oven for approx 20 minutes, until crispy. Serve with creme fraiche or ice-cream, if desired.
