Real Living recipe for marble cake.
INGREDIENTS
Spray oil
200g butter, softened
1¼ cups caster sugar
2 tsp vanilla extract
4 eggs
3 cups self-raising flour
½ cup milk, at room temperature
1 tbsp cocoa, sieved
Few drops pink food colouring
Choc butter cream frosting
250g butter, softened
1½ cups icing sugar mixture
1 tsp vanilla extract
2 tbsp cocoa, sieved
200g milk chocolate, broken into individual pieces
Vanilla ice cream, to serve

22cm square cake tin
Baking paper
Electric mixer with paddle attachment (or wooden spoon)
Silicone spatula
3 medium mixing bowls
Skewer
Microwave safe bowl
METHOD
1. Preheat oven to 200°C (180°C fan). Spray cake tin with oil and line with baking paper.

Make batter
Put butter, sugar and vanilla in bowl of electric mixer with paddle and cream on medium-high speed until pale and creamy.
3. Add eggs to mixture one at a time, ensuring the first is incorporated before adding the next. Add flour and milk and stir until just combined. Divide mixture evenly between 3 mixing bowls. Add cocoa to one bowl and pink food colouring to another. Stir to combine.
4. Dollop alternate spoonfuls of each mixture into cake tin. Stir with skewer to create marble effect. Tap tin on bench top to settle mix.
5. Bake cake for 45 mins or until skewer comes out clean when inserted into centre. Remove from oven and turn onto wire rack to cool.

Make chocolate frosting
Meanwhile, combine butter, icing sugar mixture, vanilla and cocoa together on low speed of electric mixer with whisk attachment, until incorporated. Increase to high speed and whip until pale and fluffy.
7. Melt chocolate for 2 to 3 mins on medium heat in microwave safe bowl, stirring every min. Allow to cool slightly. With motor running, drizzle melted chocolate into butter and sugar mixture until incorporated.

Ice cake
Spread frosting over top and sides of cake and allow to come to room temperature before serving. Delicious with ice cream!
A light and fluffy favourite. The sponge can be a little dry on its own so a topping of butter cream icing adds a rich moistness.
