Real Living recipe for baby cos with buttermilk and chive dressing.
INGREDIENTS
4 baby cos lettuces, trimmed & quartered
Buttermilk & chive dressing
¼ cup buttermilk
2 tsp lemon juice
2 tsp Dijon mustard
½ cup olive oil
1 bunch chives, chopped finely
Sea salt
Cracked black pepper
Equipment
Sharp knife
Blender
Small bowl
Spoon
Platter
METHOD
Make dressing
Place buttermilk, lemon juice and mustard in blender and, with motor running, drizzle in olive oil in a slow stream to emulsify dressing. It should resemble runny mayo. Pour dressing into bowl with chives.
Stir to combine. Season with salt and pepper to taste.
Serve
Lay lettuce wedges on platter and drizzle with dressing.
A simple green salad with a deliciously creamy, tangy dressing.
