Real Living recipe for BBQ baby octopus pizzas.
INGREDIENTS
10 cleaned baby octopus
1/3 cup sweet chilli sauce
2 garlic cloves, minced
1½ tbsp olive oil
Sea salt & cracked black pepper
4 rounds souvlaki or Lebanese bread
1 cup tomato passata
32 baby bocconcini balls
Handful basil leaves
Equipment
Sharp knife
Barbecue
Chopping board
Large mixing bowl
Small mixing bowl
Spoon
Tongs
Metal spatula
Pizza cutter or large knife
METHOD
Preheat barbecue to high heat.
Prepare octopus
Remove hoods and slice into rounds, cut legs into 2 pieces. Place baby octopus, sweet chilli, garlic and oil into mixing bowl and toss to combine. Season with salt and pepper to taste.
Cook baby octopus on flat plate of barbecue for 1 to 2 mins to par-cook. Remove from heat and reduce heat to medium-low.
Spread passata evenly over bread rounds and top with par-cooked octopus and dot with bocconcini. Cook with lid down for 5 to 7 mins until cheese is melted and octopus is fully cooked.
Serve
Remove pizza from heat. Sprinkle with basil leaves, salt and pepper. Slice and share around.
Tip
If you're not too keen on octopus, you can substitute with medium green prawns or cubed chicken thighs - cooking times will very slightly.
