Real Living recipe for chocolate coconut hedgehog slice.

INGREDIENTS

100g butter
360g dark chocolate (45% cocoa), chopped
¼ cup cream
1/3 cup shredded coconut
100g savoiardi biscuits (ladyfingers), broken into pieces
2 tbsp shredded coconut, to sprinkle

Equipment
Knife
24cm x 15cm baking tin
Baking paper
Medium saucepan
Silicone spatula
Cling wrap
Chopping board

METHOD

Line base and sides of tin with baking paper.

Melt butter, chocolate and cream together in medium saucepan over low heat, stirring regularly.

Remove from heat and stir through coconut and biscuits.

Pour chocolate mixture into lined tin and tap well on a hard surface to settle mixture. Sprinkle with extra coconut and cover with cling wrap. Refrigerate for a minimum of 2 hrs to set.

Remove slice from tin and discard baking paper. Place onto board and cut into squares. Keep refrigerated until ready to serve.
