Mint & lychee caprioscas
INGREDIENTS
1/2 bunch mint
2 tbsp brown sugar
3 limes, quartered
1 cup lychee juice
16 lychees, peeled
1 1/2 cups vodka
Plenty of ice
2 to 3 cups soda water
METHOD
Place mint, sugar, limes, lychee juice and half the lychees in bottom of jug and muddle together with rolling pin.
Add remaining lychees and vodka then stir to dissolve sugar. Refrigerate for 1 hr to infuse.
To serve, fill jug with ice and top with soda water to taste; stir to combine. Pour into glasses and make a toast!
