Cranberry granita champagne cocktail
INGREDIENTS
1L cranberry juice
2⁄3 cup caster sugar
5 tbsp lime juice
1.5L (2 standard bottles) brut champagne or dry sparkling wine
Equipment:
Medium saucepan; spoon; 4 1/2-cup capacity freezer-proof container; cling wrap; fork; 8 glasses
METHOD
Make granita
Place cranberry juice and sugar in saucepan over medium heat and stir for 2 mins to dissolve sugar. Remove from heat and add lime juice. Stir to combine. Pour into freezer-proof container. Allow to cool. Cover with cling wrap and freeze overnight.
Serve
Scrape fork along surface of granita to create ice shards. Half fill glasses with Champagne and place 1 heaped spoonful of granita in each glass. Let froth subside and divide remaining granita among glasses. Serve immediately.
