BBQ roasted radish salad
INGREDIENTS
1kg baby radishes
Olive oil
2 tbsp pine nuts
150g soft fetta
1 large bunch fresh cress
Salt
Equipment:
Roasting tray; tongs; salad bowl; salad servers
METHOD
Place
radishes in roasting tray with a glug of olive oil. In a hooded barbecue, roast radishes for about 15 mins or until soft. When cooked, remove and allow to cool.
Toast
pine nuts on barbecue hotplate for 1 min or until lightly coloured.
Place
toasted pine nuts and roasted radishes in salad bowl and toss to combine. Add cress, crumble over fetta, drizzle with olive oil and season with salt.
Serve
salad on its own as a light lunch or entree, or as an accompaniment to barbecued meat, chicken or fish.
