2 tbsp vegetable oil 800g pumpkin, peeled and cut into 5cm pieces 1/4 cup (70g) jungle curry paste (available from Asian grocers) 1 and 1/2 cups (375ml) salt-reduced vegetable or chicken stock 50-60g palm sugar, chopped 4-5 tbsp fish sauce 150g fresh baby corn, halved lengthways 400g snake beans, trimmed and cut into 3cm lengths 150g cherry tomatoes, halved 1 tbsp finely sliced lemongrass 1/2 tbsp finely sliced kaffir lime leaves 1 cup fresh Thai basil leaves, to garnish Jasmine rice, to serve
